My baby sister is 24! We celebrated her with a family gathering at our home. This crazy family consists of my separated parents, an older sister, her husband and four kids, my little sister, her daughter, and my little family. Together that’s a whopping seven adults and six children. Wowza.
With so many people in the family, we choose simple food that is bound to make everyone happy. Being the host, I provided the appetizers and sides. My parents took care of the birthday girls requested ice cream cake. My brother in law grilled the ribs. The appetizer I whipped together was a legendary fiesta corn salsa.
It’s quick, easy and delicious.
I mean seriously look at how pretty it is. So you ready for the recipe?
- 3ish cups of corn – I used 3 cans but feel free to use fresh too
- Chopped cilantro- use as much as you like
- 1 chopped jalapeno
- 1/2 chopped purple onion
- Juice from 2 limes
- 1/2 red bell pepper
- salt to taste
